    摘要: 食品安全對於守護公共健康至關重要,食品供應鏈中掌握食品安全核心者為食品從業人員,而缺乏良好管理、培訓、教育將成為增加食源性疾病爆發風險的關鍵因素。
    本研究目的在開發一個為食品從業人員而生的沉浸式教育訓練,針對果汁工廠 員工常見錯誤並結合虛擬實境、《食品安全衛生管理法》、食品良好衛生規範準則 (GHP)以及食品安全管制系統(HACCP)而設計。虛擬實境教育訓練將模擬出 一個果汁工廠,融合上述法規的操作要點,並對受試者進行測試,本研究納入共 32 位果汁工廠員工及 25 位臺北醫學大學食品安全系學生作為研究對象,通過前後 測評估虛擬實境教育訓練的有效性,並以易用性、有用性及有趣性感知問卷調查對 於虛擬實境教育訓練之接受度。本研究驗證了虛擬實境教育訓練應用於食品處理人員培訓計劃中的效果。值得注意的是,虛擬實境教育訓練擁有廣泛接受度,並於結 果中顯示出其有效性。此外,研究發現年齡較輕、工作經驗少於 2 年或擁有較高學 歷的受試者更願意接受在教育訓練中應用 VR 技術。本研究初次評估應用 VR 進行 職場人員教育訓練的即時成效,同時也找出了虛擬實境的使用限制,未來可持續進 行追蹤以評估虛擬實境教案的長期實質效益。
    Food safety is critical to protect public health, and food handlers are key in ensuring the safety of the food supply chain. Proper management, training, and education are essential to minimize the risk of foodborne disease outbreaks.
    This research aims to develop an immersive education specifically designed for food handlers. It focuses on common errors made by juice factory workers and incorporates virtual reality, the Act Governing Food Safety and Sanitation, Good Hygienic Practice (GHP) guidelines, and the Hazard Analysis and Critical Control Points (HACCP) system. The Factory Simulator will simulate a juice factory, integrating the operational points of regulations mentioned above, and participants will be tested. The study includes a total of 32 juice factory workers and 25 students from the Taipei Medical University's Food Safety Department as research subjects. The study will evaluate the effectiveness of virtual reality education and training through pre- and post-surveys. Perceived ease of use, perceived usefulness, and perceived playfulness will be surveyed to gauge the acceptance of the Factory Simulator. The research investigated the implementation of VR applications in the training program for food handlers. Notably, the VR training plan was well-accepted and demonstrated its effectiveness. Furthermore, we found that individuals who were younger, had less than 2 years of work experience, or higher educational qualifications were more open to embracing VR in educational and training.
